According to top London chef Brett Graham, whose restaurant The Ledbury was voted third in the National Restaurant Awards 2015, fine dining restaurants are having to become less formal as discerning diners seek more casual options.
London diners in particular are after a slightly more informal approach to service and are looking to avoid stuffy surroundings and enforced dress codes, yet they still expect high quality food and a friendly ambience.
It is thought this new direction by diners accounts for the large growth in the street food and all day dining trends, both are set to increase by over 40% in the next 3 to 5 years.
